3 guys order a family size pizza and each one pays $10. Therefore, the total for the pizza is $30.

The waiter realizes that he overcharged them knowing that the pizza costs $25. He takes $5 out of the cash register, keeps $2 in his own pocket and returns $1 to
each of the 3 guys.

Now, knowing that each of the 3 guys effectively paid each $9 for their share of the pizza and that the waiter kept $2 in his pocket, where did the remaining $1 disappear.

The math is 3 x $9 = $27 (effective payment by the 3 customers) + the $2 the waiter put in his pocket when he returned the overcharge amount

Therefore $27 paid + $2 in the pocket = $29. However, the original amount paid was $30. What happened to the last $1?

They each paid $10 when they should've each paid 8 and a third. By getting $1 back, they each essentially overpaid by 2/3 x 3 which equals only 2 which is what the thief took :). Aka the missing dollar is the cost of the pizza.

@HumanEarth perhaps I will ask you the following question:

How long does it take to unthaw a frozen beard, knowing it has been subjected to minus temperatures for close to an hour but given the fact that the unthawing takes place in a warm place (48 degrees F) and that the steam of a hot cup of coffee is impacting the overall temperature. The length of the beard is 3'' and there are 48,916 hair on that beard.

I am expecting a result that is within 30 seconds of reality. Go, you have 45 minutes starting from... NOW!

Well @Stephie for one thing that's a riddle and not real life.

In real I tip between 15%-20% and sometimes a little more if I can afford or the situation called for it
