@sarabee1995 I like omelettes for lunch, not breakfast. I had one today with home-cooked ham, and mushrooms sautéed in real butter. :-)

Interesting...@ArtieKat Hmmm... I think that's how I've always spelled it, but now that you bring it up I'm not sure??? But yes, over the last five years I've spent a ton of time in Europe. 🙂
@meggie interesting. 🤔 I didn't do that. Typically I'll toss the chopped white onions in the pan first to get them grilling. Then I'll whip up two eggs with a splash of skim milk. Next, a secret I was taught a long time ago is to add a little pancake mix to the eggs to fluff them up a bit. Setting the eggs aside for a bit I'll add whatever other ingredients I have to the grilled onions (ham, bacon, tomatoes, etc). After another minute or so I'll add the eggs, whisking as I do. As the eggs cook, I'll pick up the edges and drain any uncooked eggs to underneath. Lastly, I'll add the shredded Cheddar and fold the egg over the cheese. Yum yum yum. 😁
