Today I am enlightened about … capsicums (bell peppers)
1. Red capsicums require more time to grow and need more nutrients to grow it as well 2. Red capsicums have 7 times the beta carotene levels than in green capsicum
They also have more vitamin C than an orange, ( O ~ 70mg, C ~ 95mg), which is 105% of daily needs .
Not a superfood , but damn close!
NB.....If youre after beta carotene, carrots have 400% more than red capsicums. ( in fact, if you eat too many , you can literally turn orange due to the excess of BC😅).
Also, if you cook vegetables high in insoluble vitamins like vit. A, in a good oil, it helps release them and make them easier to absorb. Or so ive read.
