I've never had a job that doesn't withhold taxes so how many hours per week is safe to take without having to pay out the wazoo at the end of the year??

If you expect to make about the same this year as last year, plan to set aside your state and federal taxes to about equal that. If you are making more money, set aside last year plus maybe 15% to be safe. So if you paid 10k in taxes, set aside 11,500.
