Would it be possible for Mr Trump to ban Twitter or Facebook, using an executive order, because they are a "threat to national security"?

Probably, the power of the executive order is pretty wide. It's supposed to be used only during national emergencies, Trump has been declaring everything as an emergency and pushing things through that way. Most end up being legally challenged and struck down (eg Muslim ban), but it causes massive disruption in the meantime

@TheSirfurryanimalWales His reasoning is that it's a national emergency because it's a security risk for a foreign social media company to be used. A more cynical view is that a bunch of US teens trolled his Tulsa rally last month, so this is his revenge

The games division is not affected, but not explicitly. Given the size of Fortnite, it'll only be a matter of time, pretty much all the major companies in China are ending up on the banned entities list one after another. They'll just say the games are siphoning money out of the US into China and need to be locked out.
