I have a linux box plus a windows laptop.
I really dislike the default Ubuntu desktop environment (GNOME or Unity) as well. Luckily it's easy to switch yourself to MATE on a modern Ubuntu.
It will remember your preference for MATE (maybe that's a checkbox??) and start MATE every time after you choose it.

To start a session with MATE, click on the gear icon in the bottom right corner of the login manager and select MATE. You will then see the MATE environment.
It will remember your preference for MATE (maybe that's a checkbox??) and start MATE every time after you choose it.

@ElwoodBlues MATE would be perfect if it wasn't for the panel being wonky with laptop-to-monitor setups. I prefer XFCE for that very reason.
