Do you think spraying a hostile cat with water will scare it away or piss it off and charge/kill me?

There's options offline and online to see about getting the help of an animal behavior expert to know how to deal with aggressive cats, there's usually an underlying reason but animals can't tell us what's wrong because they don't have the capacity. I like to think of My Cat From Hell series, the guy that did that is a cat behavior expert whose really helped a lot of them and often times the underlying issue wasn't the cat itself. You may have to just put more effort and research, reach out to many other people and see about hiring someone or getting a book on the subject to help. It takes time but if you care that much then that's probably what you need to do.
@SatanBurger im only pet sitting so its not one i have to deal with a lot so i guess its just scared of me.. it literally tries to trap me and attack me all the time and ive tried to carry food around so if it trapped me i could feed it and it wouldnt work it would ignore it and either swing at me or move closer while hissing and i really dont know what to do. Before it was only 3 days and now they want me there for over a week... and idk how id deal with that for that long. It's awful because i have to watch out for it the whole time or I'm scared it'll attack me. And being trapped by it is terrifying every time

@PetalsOfLilac Hmmm I do get concerned though because it means the owners haven't worked with their cat enough. I don't want to say anything more because they may honestly love their animal, many people do but many are also kind of ignorant too. That's kind of an issue. I wish I knew what to tell you.
@SatanBurger i dont want to feel like a terrible person cause i dont like punishing animals like that but i rly feel like its for my own safety. And id only do it if it traps me and maybe itd know to stop doing that. Although if it trapped me and i did that and pissed it off to make it attack then umm that would suck

@PetalsOfLilac I get it, you're not a terrible person for protecting yourself and you do what you must, you don't want to do it but it's also your safety in mind. You don't owe any justification to me. I actually thought it was a stray you were talking about at first but this is understandable. I really wish I had answers, it could be many reasons the cats like that but the owners should have known their own cat and warned you in all honesty. They should have told you, I mean maybe the cat acts differently with them and it's just scared maybe... but it's kind of sketchy that the cat's temperamental to begin with.
