What makes a good conversation good?

Why do some conversations with certain people are great but other conversations with certain people go downhill? What do you do, if anything, to make a great conversation?

Listening is important. It's no fun talking to someone when you can see they aren't listening, but visibly counting the beats and waiting for their turn to talk. The best conversationalists take an interest in what others are saying.
It's also not enjoyable talking to someone who complains all the time. Everyone has problems, and the occasional complaint is expected, but no one wants to be around a habitual Debbie Downer.
And people who talk about nothing but themselves get very dull very quick.
I think the most enjoyable conversations have balance, with both participants contributing, listening, and discussing subjects of interest to both.
