I use to cook a big breakfast (eggs, bacon, potatoes, pancakes) and dinner would be steaks or other meat on the grill with fresh vegetables. Now I precook a lot of things and just warm them on the grill. You can take some tortillas to put on the grill and roll your choice of food in it with cheese for quesadillas or burritos. If you have electricity take slow cooker and toss stuff in at lunch to have a big dinner
I've gotten picky with my chili as I get older and I presoak a few kinds of beans overnight and put in a skillet with some onion, squash and peppers in a skillet and throw the spices in and put on a grill that I can cover and let it slow cook. I also throw some tortillas on the grill. Bring some avocado or cheese to put on top and it's so good.
@shakemeup chili can be done in so many different ways. I do a meatless chili with black beans, lots of chopped onions, chopped bell peppers and Anaheim peppers. I also double the cumin in the recipe I use and add in one chopped chipotle pepper for flavor.
I've never thought of squash, might be an interesting thing to try next.
