In this particular case, I kind of get it. Snow White was originally a Germanic tale. The title character had that name because her skin was "white as snow," this being pointed out in a story written by and about the already quite pale Germanic people. Her being recast with an actress who appears to be (I'm guessing) either Hispanic or Middle Eastern does seem quite strange.
That being said, what is up with people (usually the far right) getting all up in arms because fictional characters are recast with someone of a different gender and/or ethnicity from previous versions? What is broken in someone's brain that they give a rat's rectum about something so trivial? And it always seems to go in one direction -- a character who was cis, straight, white, and/or male is recast as something else and this is the worst thing that has ever happened, and not just in a movie. Pardon the expression, but I think it's bigots showing their true colors.
