I usually go for the plainest because it leaves more flexibility for different styles of decorating the room.
But honestly, taste is highly personal.
Maybe consider the practicalities.
Which is:
- cheapest?
- easiest to install?
- easiest to sweep/vacuum/wash/keep clean?
- what kind of protective coating does it have or require to prevent stains?
what variations in natural (wax/oils) or synthetic (epoxy, etc) coatings?
most durable?
- least likely of off-gas carcinogenic chemicals from the glues in the plywood?
- easiest to clean and repair?
You could consider other factors too such as:
- acoustic properties - how much does it bounce or absorb sound?
how does it sound when people walk in hard shoes or drag furniture on it?
- fire rating - how flammable is it? would burning release toxic gases?
- how hard is it? will glassware and crockery break easily?

I've installed dozens of laminate and hardwood floors over the years, solid grain always looks the best; knots/blemishes are okay on something like cabinets, but they don't blend well on floors (especially across an entire room), there's always spots that look out of place/unnatural or look like actual damage

Right. We have it at the farm and it looks great, Except ours is commercial grade vinyl , that comes in the planks. Looks exactly like wood, easier to clean , very tough and if you need to replace a piece...just takes a heat gun and a putty knife to get it up.

Both are nice but for me it depends upon the room(s) where it's to be installed.
What is the furniture and color of the walls? If there is an abundance of color in the room go for the more neutral but if the room is monotoned somewhat use the one with variety.

I like uniformity....so I like the one on the left, and it will make the floor look bigger. The one on the right with different shades may not look well when there's less light in the room (for example at sundown)..may look too rustic or may make the room look smaller.
