Cooking the New Year's Sauerkraut

Busy boiling and rinsing the sauerkraut! The pork loin and onions are already sauteed. After I finish boiling the sauerkraut 3 times I'll combine it with the meat and roast it in the oven. I started kind of late, darn it. My back aches and I'd like to quit this standing-up business. But the sauerkraut and pork must be cooked so it will be the first thing we eat in the New Year! Tradition is tradition!

My late ex fiancee did the pork and sauerkraut thing at christmas and easter. When I got together with her I changed it up a bit, I slowly cooked them in a crockpot, a half cup each of grape and apple juices as braising liquids, added sliced onions to the thoroughly rinsed sauerkraut, browned the bone in pork shoulder roast, three hours on high, five hours on low, put the roast under tin foil in a ceramic bowl to retain heat, it would fall apart tender on its own, while the pork was resting, I would drain and reduce the liquid in the sauerkraut and onions, then caramelize it with butter, and serve it all with from scratch garlic parsley mashed potatoes.
