MAJOR news announcement !!! :D :D :D Thanks to Cherokeepatti and the info she gave me about a wheat free diet, I can now eat dairy again!!!!!! YAY!!!

In one month, my body has changed from [i]severe[/i] lactose intolerance to, (now that I am wheat free), [b]tolerant[/b] of aged cheese such as Parmesan, goat cheese, (feta), and canned soup containing REAL cream! (Wolfgang Puck's Free Range Chicken with Tuscan style White Bean and Pesto).

It's like a miracle. I never knew this till I read the book by Dr. William Davis, but eating anything made with wheat or wheat flour causes the cells of your intestines to begin to break their bonds with the other cells next to them. Eventually, elements from digestion can actually escape from the intestines, making you very ill!

Wheat causes ALL kinds of digestive ailments, even if you don't have celiac disease. Wheat also triggers intolerances and allergies!!

To say I was suffering without cheese in my life is an understatement, because it was my favorite snack. It's on or IN so many things!

Each little bit of success emboldens me, and next I plan to try aged Cheddar!!!

@carpediem I now have three of his books. "Wheat Belly" was the first...heavy going for me. I LOVE to read but my eyes start to cross when the science gets too hot and heavy.

The second I bought was the 10 Day Detox by the same author. (I loaned that to a very nice lady who was fascinated by it), and third is the Wheat Belly Cookbook.

You can actually make your own foccacia bread, pretzels, and breadsticks out of different KINDS of flour!

The change is basically to Raw nuts or DRY Roasted peanuts...unlimited...unlimited veggies, normal amounts of meat, poultry or fish, cheese, dairy, and olives but LIMITED Fruit. Really limited. Like 10 blueberries. Cut apples in half and have half of that.

Anyway, it's quite the adventure, and Cherokeepatti told me that you can make your own soups and stews and thicken them with potato starch!!!

You can have a chefs salad or any other kind of salad anywhere you want if you are out to eat, and just take off the croutons.
