The shot show not give the illness. Usually when you get symptoms after the shot it is from immune response. Most of the symptoms actually come from the body trying to fight illness, and in those cases the body has been tricked into fighting a dead illness.
In cases like the flu where people sometimes get it to a lesser degree later in the season is usually because there are multiple strains of the flu and the vaccines are based on a few specific strains experts predicted would be dominant. The mutated strain is not completely protected against.
In the case of coronavirus, I believe new strains are being discovered that the vaccine may be less effective against. Also, in the case of the vaccine, they know it isn't one hundred percent effective.
