If you're in a car incident where air bags have been deployed

do you afterwards fold them back in yourself or must they be folded in a special way like parachutes?

Since there's those gas-cylinders filling the airbags up, you can't compress the air back into them yourself. In fact, all of that is pretty much single-use and come in replaceable modules, the steering wheel or panels they're under probably too damaged to re-use as well so will likely need to replace those too.

If your car is not totaled the air bags are replaced with new ones.
