Why does it bother certain users so much that some of us set up several profiles?

It's not uncommon across many social media.
If you're up front about it then I don't see a problem with it. With some people it comes across as insincere and fake or even attention seeking.
And if catfishing well☺ it's all gonna catch up eventually.
But some people are just too awesome for one profile. Haha
