Ever eat expired food? I'm making expired potato soup mix

It expired on the 5th and today is the 8th so it's no big deal. It's a dry mix anyway

Yes. Got a bag of carrots in the ice box that are marked "best by" November 2022. But since they are carrots and not dairy, I'm eating them anyway.

@iamnikki carrots keep pretty good in the refrigerator. Sometimes they grow little hairy roots though.

@cherokeepatti yea they aren't very sweet now but it's ok, I'm having them with roast anyway. They are in the Crock-Pot now.

I hate when potatoes grow roots. Grosses me out. That's the one thing I hate about Aldi too, they don't sell individuals. I went there yesterday and had to go elsewhere for 3 russett and 3 sweet potatos 🤨

@iamnikki I got my last two bags of potatoes for $1.99 for 10# bags, probably cost more anywhere else to buy them individually. Still have over 5# to cook with. I hate when potatoes turn green, gotta cut all of that off because it’s toxic.

@cherokeepatti yea it is cheaper but I've come to realize that when I buy too much, for the sake of a better deal, it winds up in the trash, so I'm losing money. Like with salad bowl lots, vs bags of salad. I always eat the bowls, usually the salad bags wind up in trash.
Green potatoes are toxic- noted ✅

@iamnikki Yeah you are by yourself too. I like potatoes so much I could go through a 10 pound bag before they go bad. When I get on a spinach kick or a salad kick or whatever I can eat all of the bagged stuff before it gets bad.

@cherokeepatti Do you have any potato recipes? I need to learn how to make potato salad. I always buy store bought. Same with macaroni salad. I thought about using some potatoes to make some type of stew, just adding a bunch of veggies and some sausage or something.

@iamnikki I have a lot of recipes, some I get off of Pinterest. They have a lot, I like to look at the photos and then check the recipes. Mostly just cook with what I have and make it without measuring on classic recipes like potato salad. I take leftover mashed potatoes and make potato cakes, add baking soda and an egg or two, the boy loves them.

@iamnikki Potato salad is very easy, you almost cannot mess it up and there are many variations.
Two that I make are traditional mustard potato salad which you can follow any basic recipe online egg, pimentos, mayo, dash mustard, onion, paprika

Or white potato salad dried veg flakes from Knorr or any dried veg soup mix, dash vinegar, mayo, celery, onion powder and fine diced onion, pepper, salt to taste.

Trick is don't boil the potato until its mushy( because you don't want them to mash up).
You want them soft and cooked but not to where the moment that you try to stir and dice them that they just fall apart.

There is another version with curry powder and crumbled bacon, mayo.
Just experiment. Potatos are very forgiving of adding ingredients.

@REMsleep I used finely diced tomatoes instead of pimentos in my potato salad, gives it color but not the burpy flavor of pimentos.

@cherokeepatti OK wow, never thought of that.
I don't care that much for pimentos either but I don't hate them. I only include them if I'm serving it to my mom or other elders like for barbeques or holidays cuz they like traditional Southern Mustard Potato Salad with pimentos.
