How do you do your mac and cheese?

Mine involves hot sauce, scallions, several cheeses,chive cream cheese and heavy cream. There's garlic,mustard,paprika and a bunch of other spices in there too. It's how it was made growing up for me and I just ran with it.
I like it mixed with onions and ground beef, small amount of avacado oil and chili powder

Start with a rue, mix in heavy cream to make bechamel.Start slowly adding shredded mild, small amount of sharp cheddar ,and a little bit of swiss while whisking to avoid it becoming gritty. Let simmer briefly till it growths slightly and let set to thicken. Toss a beaten egg into some.elbow macaroni. Season cheese sauce with mustard seed, sauteed onions, and black pepper and salt. A small amount of beau-mond and paprika. Lightly fold cheese sauce into the macaroni. Fold don't mix. After it is slightly mixed fold about two or three cups of shredded extra sharp as hell cheddar.bake at 350-375 for about an hour in till it browns on the top and edges.
