I presume since, you are starting from the grass-root level, test the product with known families-friends around & after +ve reinforcement, reach the strangers with your mini sample bites.
Categorize them all in group - diabetic patients for sugar, youngsters mild or moderate spices/sweet etc. during the first test to get an idea of the majority of expected customers in future, Listen carefully & note the comments.
Take the test again to them all after the fist feedback followed by finally preparing your product as per their varied needs.
