Are two legs really necessary? You could get a prosthesis or use a crutch.
There are about a thousand reasons why a two-parent household is optimal to raise children. Sometimes it's not possible.

One parent still would need emotional and mental support. Friends and family may be all well and good but I do believe nothing beats what you can get from a partner who understanda the difficulties.
Children can be raised by one parent, but it shouldn’t have to be the case.@Mamapolo2016

@Longpatrol With two parents:
Somebody can be unable to cope for a few hours. There's a backup.
If one loses their job or has hours cut, the other can help take up the slack.
There are two opinions available in difficult decisions.
If one parent dies there's still one left.
It's not always true, and it's not gender differentiated, but often one parent is Nurturer and the other the Voice of Common Sense.

@seashells How it IS is not always how it should be. You can live on ice cream alone, but it's not the most beneficial diet.
