How do you peel hardboiled eggs properly without big chunks coming off?

The eggs I buy are organic and expensive, by the time I'm done peeling, they are half their size. :(

I bang the shells up and let the egg cool, nothing works. Any tips?
Peel them under running water

Put it in a small container with a little amount of water. Put the lid on and start shaking the container

It will be easier to peel without the egg whites peeling off too

@wildrosez yes inside the container. Or is very loose you can just take it right off.

After cooking place it immediately on a cold water..peel it under cold running water too

if they are sticking then I use a spoon to scoop them out. Older eggs don't stick, it's the very fresh ones that do.

@wildrosez also it might help to put them in cold water before peeling.

Take egg in hand, put them in between hands and roll you will see that its skin gets loosened then you can start peeling it.

*** Also make sure to put some salt while you are boiling it

After you have boiled them plunge them into ice water then crack the shells and peel off the shell with the inner membrane

it works very well especially if you have a lot of them to do. When I was working as a chef I had to do batches of 60 scotch eggs you need the hard boiled egg to be completely smooth to cover with sausage meat and doing batches of 60 doesn't leave a lot of time for messing around with fiddly bits of eggshell.

let it cool
crack it and take a tea spoon and carefully run it under the shell
piece of cake

Hit them and once they crack, roll it on a chopping board. It makes the shell brittle and easy to peel.
