My oldest son just told me when he gets his license he wants to be a uber driver should I be concerned at all for his safety

Pop is right. When, not if, he has an accident, your insurance company will deny the claim since uberring is a commercial enterprise. A 16 yo is the most inexperienced licensed driver around, meaning he is not yet a safe and defensive driver. His youth permit is just a license to learn.
The cops will find ways to give your son tickets even if he is not at fault. Since the car is in your name since he is a minor, you would be personally liable for all injuries and damages to others. If anyone is killed, it opens him and you up to being charged with vehicular homicide, as well as a huge judgement that you may not be able to clear with bankruptcy.
Finally, this may all be moot since Uber and Lyft probably do not allow minors to haul their passengers. If he tells them he is over their minimum age on his smartphone, he is committing fraud, which means more legal liability to you.
Please be a good parent and control your kid's activities.

Prolly not, he'll be independent and self employed. Those aren't bad things. So long as he doesn't act like a dumb ass while driving ppl around

Got to be 21 with a good driving record to do UBER. And by that point there is much better opportunity out there.
