The boring answer is they're far cheaper to make (just needs one piece of cardboard folded up), and also easier to store and carry several of at once (and the triangular corners make it harder to squash and so protects the context.
The real answer is pizzas are meant to be square too it's just that they're made by flamboyant chefs who like spinning dough, so end up as circles.
