Eiffel is a work of art and a demonstration of the capability of a material and construction method. Most of the, briefly, tallest buildings are just nationalistic pissing contests.

So definitely Eiffel.

If I had my druthers, I'd have an equation named after me! Barring that, I'd accept a theorem.
