Why are 'mixer taps' so trendy and popular?

I discovered the mixer tap at my kitchen since has sprung a couple of corrosion leaks and now 'sprays' water out from two almost invisible pinholes in the spout casting section.

Got me thinking - why are these 'mixer taps' so trendy and popular in the last 30 years or so? My house probably has at least a 20 to 25 y/o kitchen going by the style of it and the age of the cooktop and oven plus being a very small house everything is small and compact even in the kitchen.

So now I need to get a replacement mixer tap to replace the existing one that's as old as the rest of the kitchen fittings.

No way can I afford a full new kitchen fitout or even replace the open-coil electric cooktop and old oven, but I think I can do the mixer tap myself. I'd like to replace the actual sink also as the 'draining' area no longer drains properly.
