Teflon pans. They delaminate so I've dumped them. Stainless is ok for acidic stuff but not for sauteing.

@NativePortlander1970 Ha! I took the pan, brushed, and sanded it out, finished sanded with some ultra fine paper I had. Washed it with soap, then citric acid. Neutralized it, Rinsed. Then did a two hour boiling water bath with salt, soda and a little sodium hydroxide to anodize it. Added a bit of blue dye to verify that it was even. Drained and rinsed it.
Dried it over the flame.
Seasoned it with lard three times. Baking it on at 450°F.
Normal metal finishers use sulfuric acid. For hardcoat a dc current is applied.
I don't need too deep of a finish. Hopefully this holds up. I just do oatmeal in it.
