Natural wines are left un-fined and unfiltered, which is why they often look hazy or cloudy in the glass.

The Great Exception: Sulfur Dioxide (SO₂)The only additive that causes intense debate within the natural wine community is sulfur dioxide (sulfites).Zero-Zero Wine:

The strictest tier of natural wine. Absolutely zero sulfites are added at any point during production or bottling.
Minimal Intervention: Most natural winemakers allow a tiny dose of sulfites (usually under 30–40 parts per million) right at bottling to stabilize the wine for international shipping. For comparison, conventional wine laws permit up to 350 ppm of sulfites.
