What is your favorite type of wine ?

There's too many to choose a single favorite, and thusfar I've only had a little over 100 of the roughly 1,200 different Eurasian (Vitis vinifera) wine grape varieties grown commercially in any quantity (out of about 5,000 vinifera varieties altogether), some of which are in danger of extinction.

What's interesting to me is trying a different grape variety whenever possible ... you could try a different variety every time and it would be years before you would run out of options ... the ethanol will probably give you esophageal cancer before you run out of options.

If I had access to a winemaking facility and grapes from specific vineyards though, I'd like to try making experimental blends of cool climate, whole cluster syrah with sangiovese, pinotage, and a Spanish wine grape called bobal. All of these grapes over the years have given me the sense that they would be very complimentary in the ultimate meaty, almost gamey red wine blend (not a more common fruit bomb style which saturates the market regardless of grape variety used or country of origin), which is one peculiar wine flavor profile I am fascinated with and love (but not the only one ... I'd similarly like to make experimental dry, non-sparkling blends of white aromatic grapes like gewurztraminer, moschofilero and torrontes).
