I feel like you can tell the quality of the Mexican restaurant by there salsa

In Singapore our national dish is Chicken Rice, my working theory is that if the joint has good chili sauce, the food is good. If the sauce is bad I’m always disappointed by the rice and chicken.

It’s a metric that hasn’t failed me yet.

It's also a good sign if you go in and they just have that salsa bar with five or six different salsas to pick from. It's always an adventure to find the SUPER spicy one to avoid hahaha.
