Grandpa's Quix-Bix Biscuits.
2 c flour
1 T baking powder
1 t. salt
pinch of baking soda
1/3 c canola or other mild-flavored cooking oil - (not olive oil)
2/3 c milk
Mix together dry ingredients. Add wet ingredients and mix. As the ingredients pull together, add a bit of flour if too wet, a few drops of milk if too stiff. Pattie up the dough, and give it 10-15 kneads. Roll out to about 1/2" thick, cut into 10-14 rounds. Bake at 425-450ºF depending on your oven for 10 minutes. (I just use our toaster oven. 12 fit perfectly). Check for doneness. I usually add a couple more minutes, or just let them "coast" in the oven for a few more minutes after turning off the heat. Serve with butter, honey, or- my favorite- sausage gravy!!! This is a simple and rather forgiving recipe, a great one for grandparents to do with their grandkids. PLEASE supervise your kids and YOU operate the oven. Thank you. :- )
