Haupia Recipe - modified
Haupia is a hawaian/polynesian dessert made with coconut milk. I suspect it was a derivation of poi. I tried the classic recipe for haupia but foud it tasted watery and not very sweet. Here's my version:
Haupia
14 oz (~420 gms) can of coconut milk.
3/4 cup whipping cream
3/4 to 1 cup sugar
50 grams corn starch
1 tsp clear vanilla
1 tsp coconut flavoring
Spray a square metal or glass 8x8 inch pan with cooking spray.
In a kettle put in and melt coconut milk on low heat.
In a separate bowl whip together the sugar and corn starch. Add the cream and whip smooth.
Add cream mixture to melted coconut milk. Heat mixture to a simmer and whip until thick and glossy. Remove from heat. Add flavorings.
Pour into prepared pan but do not touch surface. Allow to cool completely before cutting with knife in pan into 1 inch squares. Refrigerate leftovers.
Toyomansi sauce on roasted pork made me think of this.
Toyomansi sauce is a cooked blend of soy sauce, calamansi juice, garlic, chilli peppers, and onion.
