Haupia Recipe - modified

Haupia is a hawaian/polynesian dessert made with coconut milk. I suspect it was a derivation of poi. I tried the classic recipe for haupia but foud it tasted watery and not very sweet. Here's my version:

Haupia

14 oz (~420 gms) can of coconut milk.
3/4 cup whipping cream
3/4 to 1 cup sugar
50 grams corn starch
1 tsp clear vanilla
1 tsp coconut flavoring

Spray a square metal or glass 8x8 inch pan with cooking spray.

In a kettle put in and melt coconut milk on low heat.
In a separate bowl whip together the sugar and corn starch. Add the cream and whip smooth.
Add cream mixture to melted coconut milk. Heat mixture to a simmer and whip until thick and glossy. Remove from heat. Add flavorings.
Pour into prepared pan but do not touch surface. Allow to cool completely before cutting with knife in pan into 1 inch squares. Refrigerate leftovers.

Toyomansi sauce on roasted pork made me think of this.

Toyomansi sauce is a cooked blend of soy sauce, calamansi juice, garlic, chilli peppers, and onion.

I would love to find some natural toasted coconut flavoring oil. I used to buy it over 20 years ago in a local large Asian market. Then they stopped stocking it. I am allergic to artificial coconut flavoring, starts my throat swelling and itching. I made some really tasty desserts with that toasted coconut flavoring. A coconut ice box cake with coconut milk and cool whip and toasted coconut on top.

@Tastyfrzz Yes they are. But they used to not bother me. I am much more sensitive to some foods now than when I was young. Sunflower oil and some others inflame me badly as well. I used to fry French fries in sunflower oil when I was about 30 and it gave them a unique flavor, didn’t bother me. But a few years ago I bought some sunflower oil and used it only once cause it set my liver on fire. I had to throw it away.

@cherokeepatti I wondee how that happened? I have a neighbor who has a fruit allergy along with other things. Every year it's something new she can't eat. Her two kids are the same way. Wheat especially.

@Tastyfrzz I have heard if you ever get sick on something like in a meal that your body can set up an immune defense against that whether it’s meat or some ingredient in that food. I knew someone who got sick on beef (food poisoning) and he ended up at the hospital after eating fresh beef again. His immune system wouldn’t tolerate it and was told by the doctor it would be that way the rest of his life. But something else is strange. I used to itch in my throat when I’d eat anything with peanuts or peanut butter in it and stopped eating those for several years. Got hungry for it one day and had a Reece’s Cup and it didn’t itch me. So I started eating peanut butter and peanuts in foods etc. Haven’t had a problem since.
