I'm going to make giardiniera - any good recipes?

I remember having giardiniera on Italian beef sandwiches in Chicago. So good.
I've been itching to relive the experience without getting shot at.

I've already started making my own "Claussen" style pickles. I may have to start making my own relish, too. I HAVE pickled veggies in addition to the pickles. My base "cold pack" recipe- Fill quart jar with 50/50 mix water and 5% vinegar. Add: 1 T canning salt, 1 t dill weed, 1/2 t dill seed, 2 cloves of garlic, minced (vary to taste). Shake. Add sliced carrots, onions, cauliflower, pickles (cucumbers grown for pickling, NOT regular cucumbers), etc to your liking. I pack my jars full- very full! Remember that this is a cold-pack recipe, good for about 3-4 weeks in the fridge. It is NOT a processed recipe utilizing boiled/canning technique needed for long-term storage. I see in your pic that there is also mustard seed, peppercorns, some whole allspice, etc. Looks good!
