We made pizza for the weekend today...
It is a double deep dish kinda thing..We have a huge family, so the cookie sheets we use are pretty big.🙂
It is not an Italian-type pizza. It is more of a Redneck or Hillbilly ( which we are) type thing, but we love it..😋
Recipe and directions
We use a dinner roll recipe with half of the yeast. We don't let it rise...
Dinner roll recipe
Ingrediants
6-7 cups flour
TBS-salt
2 eggs
1 cup warm water
3/4 cup butter
1 cup apple juice
2 1/4 tsp yeast
First, put 2 cups of flour and salt in a big bowl. Then melt the butter and add it to the flour mixture. Then add eggs to the flour mixture. Next, in a separate bowl, add 1 cup of apple juice and 1 cup of warm water, and yeast. Stir until dissolved..Add to the flour mixture and then whip with a whip until creamy. Place in a warm spot, cover with a towel, and let it sit for 20 minutes. Then add 4 more cups of flour and stir until it becomes a ball, and then knead until it is elastic-like. Add more flour as you need. Then roll it out to fit the pan you want to put your pizza in. You can cut off excess dough or roll it under to make a thicker crust on the edges.
While you let the sponge for the bread do its thing, make the pizza sauce..You can use store-bought pizza or spaghetti sauce if you wish, but add extra basil and oregano, and garlic if you want it even better. We make ours from scratch.
Pizza Sauce Recipe
Ingrediants
1 large can of tomato sauce
1/4 cup apple juice-optional
1 TBS dry basil
1 TBS-dry oregano
1 TBS dry fennel
4 pieces of minced fresh garlic
1/4 tsp onion powder
2-3 TBS red wine
Add all the ingredients to a cooking pot and simmer until all the dry herbs are soft and the flavors are married well...
If you want to add meat, cook it now. We usually add taco-flavored hamburger, but sometimes we add chicken. If we add chicken, it's cooked the night before..
Then slice any vegetable you want on your pizza or hydrate any dehydrated veggies. The great thing about pizza is you make it exactly like you want..
We usually use 1/2 cup dehydrated onions ( rehydrates to 1 cup) and 1/2 cup dehydrated bell pepper( rehydrates to 1cup)
1 whole fresh tomato, cut very thin
1 bunch of little green onions-sliced thinly
1 small pack of fresh mushrooms ( washed, drained, and dried), cut thinly
1 can black olives, cut thinly
Then grate a block of 32 oz of cheese ( we usually use mozzarella and mild cheddar.)
Preheat your oven now ot 350 degrees
To the pans you have decided to use for your pizza, which already has your crust in it, which you have either rolled the edges under or cut the extra off of, it is time to poke it with a fork all over now. Then add your sauce and spread it out all the way to the edges. A pastry brush works well for this.. Then make your first layer. For us, it is meat, rehydrated onions and bell peppers, and then cheese.

Then we add all the fresh ingredients on top of this.
Put the pans ( for us, it is 2 huge cookie sheets) in the oven. One on each shelf of the oven. Bake for 15 minutes..Then rotate the two pans. ( move the one on top to the bottom and the one on the bottom to the top) Then bake another 15 minutes, and the cheese should be golden brown and the pizza should be done..
While the pizzas are baking, you can make homemade mayo, then out of the mayo you can make ranch and blue cheese (or store buy them) dressing. You can make a nice salad to go with it. It is also really nice to have freshly grated Parmesan cheese for it, and some people like red pepper flakes too, to add on top of their pizza...🙂
If you follow my recipe, it will make 48 nice-sized pieces of pizza. We usually cut it into 12 pieces per cookie sheet, but they are really big pieces of pizza, and one is all you need for a meal..This feeds our family of six adults for the full weekend, lunch and supper..😋
