@ninalanyon I don't use cloves. Instead a teaspoon each of cinnamon, nutmeg and ginger. Make final batter runny by adding extra milk so it settles between fruit and stops cake sagging in the middle. Also add a teaspoon of bicarbonate of soda to final batter to help cake rise nicely. If using plums instead of apples, add a good tablespoon (or more) of brandy to the start of the batter mix. Plum cake cook for 1hr 20mins. Let cake cool in tin for 3 to 4 hours as it's a heavy cake and needs to set.
