I love rhubarb - I even use it in savoury dishes.

@Umile That's a really challenging question! 🤔. It's 4am here and I need to sleep on that and try to remember to get back to you. It also depends on the texture - whether it's firm or cooked to a puree, and (crucially) how much sugar has been added because it is very tart in its natural state.
