Seeing him both in the kitchen and some of his shows outside the kitchen where he is much more calm, cool and reasonable says alot.
I worked in kitchens once and it is actually pretty normal to have a chef who is somewhere between a drill sergeant and a tyrant in the kitchen but totally cool outside work.
They are there to get a job done and make sure the people under them don't create a food born illness outbreak. They are not there to be your friend.
Some of them do push it a bit far.
