Have we evolved to eat only cooked meat ? (even though I know we can eat certain raw meats)

Fire treated food made a lot of vegetables and meat edible and / or digestable for kids and older ones.
In conditions when (hunt / recolection and later) most of human effort was spent in getting food for survival, it become a evolutive advantage.

Most uncooked meat is tough and chewy. Slow cooking sometimes makes meat more tender.

I have had both Carpaccio and beef tartare, and they are quite good.

Sort of? Mastering fire was pretty early in humanity's development so whatever natural resistance to food borne illnesses we used to have is probably gone.
