Lemon meringue pie.
But if I am craving a lemon dessert and want it faster than I could make a pie there’s a recipe in the Betty Crocker cookbook for a Lemon Pudding Cake. You mix up a batter and bake it in a round Pyrex bowl (or something similar) and when it’s done it’s cake on the top and pudding on the bottom. There’s also a chocolate version in the cookbook for a pudding cake, it’s good with vanilla ice cream. Haven’t had the lemon version with ice cream.
