Have you ever had the soup chilled (in Summer) as Creme Vichyssoise? Delicious too, Patti

@ArtieKat no I haven’t. I had the leftovers at lunch and tasted a spoonful of it cold before I reheated it. It was good.

@cherokeepatti I don't make it very often nowadays because of the carbs in the potatoes - and the consistency isn't right without them :-(

@ArtieKat the health advantage of having the soup as Vichyssoise would be that the potatoes will develop more resistance starch and that has a lot of health benefits…digestion, balancing neurotransmitters, healthy appetite and weight loss, better digestion etc. These are very good carbs.
