All you need is diced and pealed rhubarb
Water just above the rhubarb
A bit of sugar
Boil until rhubarb turns stringy
Add more sugarif needed
Mix cprn starch in cold water and add until right texture.
Add cinnamon of you want.

I've never had it as soup but I do love rhubarb. I used to stuff a whole mackerel with it - counteracts the oiliness of the fish beautifully

I can’t handle rhubarb…too much salicylates in it. I loved the flavor rhubarb as a child but got sick one night and never had it again.

My grandmother used to grow rhubarb and make soup and pie. I liked it but I don't think I've had any in about 65 years.

I know ripe and cooked it's fine, but otherwise it's mildly poisonous.
