Jambalaya on the menu...

I grew up in Cajun country. The main ingredients are sausage, celery, peppers, onions, garlic, green onions, rice and stock of choice. Chopped up ham and, or chicken can be added if handy. Brown the sliced sausage and set it aside. Add the chopped veggies and cook them down in the sausage drippings still in the pan. Once carmelized add the cooked rice a sausage back to the pan. Add chicken or beef stock, cover and cook it all down at low temp for a hour or until the liquid has been absorbed by the rice.

Somewhere I remember hearing that 'jam' or 'jamb" was an old French word for ham, and jambalaya was historically made from pork or pork sausage.
