Smoked haddock florentine pie

I made this yesterday and it was yum and so easy. It would be great for big family meals over Christmas with some extra veg or salad and you can make ahead.

I pan fried onions and leeks and then wilted some spinach which lined the bottom of the casserole dish. Then I part poached some smoked haddock which went on the spinach mixture and then topped it with white sauce (flour, butter, milk, pepper, nutmeg) mashed potatoes and grated cheese.

Update: Somebody asked for pics. These photos are of a similar fish pie I made tonight but the base was just spinach and it had smoked haddock, salmon and cod in it.
