Something quick that takes 20 minutes and serves four is a mozzarella meatball sandwich. It takes a loaf of French or Italian bread, a cup of Italian sauce (I use Prego, but Ragu is equally good) and 12 1/2 oz. beef meatballs. Just heat the loaf at 400 degrees, heat the sauce with the meatballs, put together and serve. (You don't have to make the meatballs from scratch - you can get perfectly good frozen ones by the package.)
