I Love Cooking For People I Love

I made this tonight. [b]Stuffed Mashed Potatoes[/b].


For those of you who are interested ..

Mashed Potato:
Peel and cut your potatoes into cubes then boil them in water. Then mash your potato, mix it with an egg, cheese of your choice, salt, and black-pepper.

The Stuffing:
Add olive oil to a pan, then cook onion, red bell pepper, and small pieces of chicken, season them with salt, black-pepper, red chili powder, paprika, onion powder, garlic powder, and dried oregano. Later add some spinach.

Now make a square layer of mashed potato, then add your stuffing over it.. after that add another layer of potato on top to cover it. Bake in the oven for 400°F/200°C for 40-45 minutes.

And you are done!

@soar2newhighs Those look amazing! What was the marinate of your chicken?
Anytime I do(fry) regular chicken or chicken wings or chicken tenders, I poke the pieces with the tines of a fork, then let them sit in BUTTERMILK for anywhere from 6-8 hours or overnight.@Madeleine
