I Like to Cook

Garlic Parmesan zucchini, yellow squash, and eggplant simmered in a skillet, with a garlic butter sauce drizzled over it at the end, cooked until very tender.

It's addictive and sooo very good. :)

I bake zucchini and yellow squash after cutting in halves, I sprinkle with sea salt, a little garlic powder and pepper and at the end I sprinkle parmesan on top and let it melt. Egg plant...is a negative for me! Lol
