How many insist on strong black coffee!

Sweet too, is good, just soften the harsh bitterness of your first morning drink!

Years ago, I saw a guest on an American cooking show who said that coffee should NOT be bitter, but that oils coming out in the grinding end up making it bitter, over time.

This person had raw coffee beans & showed how to roast them in one's own oven, which caramelizes the beans, making them *sweet*. By roasting in small batches, and grinding & using the roasted beans immediately, one gets a sense of what "coffee" is supposed to be...not the bitter crap it all-too-often *is*.

Prior to that, I had never given much thought to it, other than to notice that many restaurants have particularly crappy coffee; yuck! 😉
