Most archeologists and historians believe that it was discovered by nomadic tribes in Asia and the Middle East when they slung bota bags of milk over their horses and camels, and the heat and motion resulted in cheese. The great variety of cheeses came from man's incurable need to create new, improved, perfect versions. Same with how olives came to be leached in order to be edible. Some feel into rain barrels, or whatever they were using to collect rain water, and became accidentally leached and the ways in which to leach them evolved in the never ending search for new, improved.
