The Writer - Smokes a Brisket

I'm smoking a 10lb brisket, it was 13lb before trimming. The pan before the brisket is the fat, I'm going to try to render it down and make beef tallow.

I'll add more pics as the cook progresses. So I'm starting the cook at 180F or 82C. I'm expecting the cook to go for 15-16 hours.

@Atlotto I'm using Traeger competion pellets.

Oak, hickory, and maple.
