I made cinnamon rolls! I know they aren't perfect but I know what I did wrong!

Spelt isn't easy to learn to cook with .

In the last year I've been experimenting with other flours like coconut flour, dried banana flour , spelt. etc.

Wheat flour is so popular because it's light and very stretchy and has lots of structure - which means it makes things that stick together well.

The reason we have left these more ancient grains behind is that they don't have these benefits - they are less structured - they make things that break or crumble easier - they don't stretch and rise as well with yeast .
(I think this is why many ancient recipes are based around flatbread type baking)

But they are nutritionally superior .

I can't really give you any advice except that I know spelt needs more liquid than wheat flour in recipes....but then that also depends upon the type of spelt flour you are working with .
Honestly - I changed what I cooked , rather than spend too much time trying to get better results with spelt.
I tend to use it more for pastry bases and biscuits , and have accepted my cakes are gonna be heavy 😂

But mostly I try to stay away from cooking those things now as I know ultimately - they aren't healthy .

But it's good that you are looking into these grains - white processed flour is AWFUL. Its terrible for the gut and is often one of the causes of systemic inflammation and allergies.

I have been researching non inflammatory foods for two years now , and it's amazing how much of the modern diet isn't good for us .

I think you did great. That was an ambitious first project for spelt .
They look really yummy .

@OogieBoogie well that or they make sourdough but thats a whole other process also flavour wise different!

ooh they are for sure better nutritionally.

well i like baking things for people and cooking but as my mother is allergic i try to make things she can't eat anymore in spelt that you might find in a speciality store but for like 10 euros for a croissant and then its kind pointless.

i know i need to almost double the dry yeast if i want ta similar result with spelt but it needs more to get the same but then you'll taste yeast and fluid wise you need about 150% of the wheat one. but you can just add 50% extra because as baking goes adding so much more at once screws it up again!

Health be damned! i want something delicious! i'll figure out delicious healthy things too but i also want to make treats too!
but mainly its my war against toppings, my bakery is filled with sweets but they are all shit due to being covered with sugar syrup and people think its so much better!
IT'S NOT! IT'S DISGUSTING! you bake this delicious treat and then add a bunch of sugar over top. just vile. and here in belgium its a little dribble a little splash at most, but these american dipping their already syrup cover donut in even more syrup and then say this is how a donut should be! 🤢 a donut should be sprinkled with a little sugar on tope that's it!
so i'll bake the sweets that have syrup on them just to have them without that disgusting stuff!

also i don't see myself have much worth in a relationship so i hope expending my repertoire i can at least seduce a gal by appealing to their stomach ☺️🤣

ooh i most likely am similar to my mother i'm not allergic where i get stomach pains but my stomach does inflate a lot if i ate a lot of flour things!
but the taste is so much better than other dough so its tough. like whole wheat is just bad! i actually prefer spelt pasta over the whole wheat!

well the biggest things are the things to keep them good for longer but also the sugar. when i first went of sugar for my diet when i started working out i try to avoid any sugar i could, they put sugar even in toast ;( like regular toast with some spices like mediterran or garlic. i look on the back and there it was this whole box contains 10% of your daily sugar intake. and they expect me to not eat the whole box, it s a small box and i'm a big guy! but the bad thing was not overall 10 grams of sugar no no that would be to easy! that was sugar alone not even counting the gluten from the wheat!
planning to start again once more though! can't eat a lot of stuff though 😮‍💨

well wasn't my first spelt project but the most intricate maybe? not sure i did a bunch of spelt things before but i first always follow the instruction with just converting wheat to spelt in equal amounts but afterwards i start searching the right combo of ingredients to make them with the same result!

like there was a simple vanilla cake but i hate working with butter its a pain! so i found a recipe with oil but i also use soy milk so its sweeter. now there were 160 grams of sugar in it! i managed to take off 40 grams of sugar before starting to taste it! so now i have a pretty healthy recipe for vanilla cake!

wait maybe i should make a blog or youtube channel for spelt baking 🧐🤔 where i convert recipes to spelt the right way!
@popmol you know , that wouldnt be a bad idea - to start a channel .
So much is coming out now about inflammation , and how sugar is basically a poison, along with white processed flour . People I think are going to be looking for these typesof things .

I bloat too after eating . I used to think it was just me - but after all my reading, I now realize I have a bad reaction to some foods. Most.of which are white and carbohydratey :
Flour
Pasta
Bread
White rice
Potato (a bit)
Sugar
Alcohol .....just to name what I know so far .

As soon as I cut them out of my diet - I stopped bloating . I stopped getting acid reflux. Even joint pain went away.
It was AMAZING.

I'm not perfect , I still cave and have a treat now and then - buty health is so much better since cutting these foods out .

And you're right - they lace EVERYTHING with sugar - it's why I rarely eat out. Why I prefer to cook than buy prepacked produce.
My kids don't have toast for breakfast any more - I cook them bacon and eggs .

I kinda have a rule - if it's white - I don't eat it (only exception is milk ....and I still think I might try dairy free sometime to see if it helps ).

But keep at it . Let me know what you discover.

@OogieBoogie i would just make recipes but with soy milk and spelt so people know the exact measurements for those recipes.

thats impressive, i jsut got less headaches mostly. the sugar level does the same as coffee. once you stop you'll feel awful but after a week i felt way better.

yeah keep it up :)

i wouldn't give them too much bacon and eggs because those can have negative effects if eaten every day but not working out enough, although they are kids so they'll need it when running around a lot if they do that. leaving out a day sometimes can be helpful.
but yeah everything is laced with it certainly prepacked produce.

i do know a nice sweet treat if you like it, couer de beauf tomatos, unions, balsamic vinegar maybe a little sugar if the vinegar is nto the sweet kind but is not required. with the unions with them add figs for sweetness and then add goat cheese! do this in a small piecrust (any kind you like) and in the oven! a lovely treat!

if you have any problem ever after milk you should do milk alternatives! soy milk is good i don't like the other alternatives but most say they are good too.

i'll try to give you any tip i can! ooh i can translate this recipe i have for spelt crackers they are good! even for me who doesn't like spelt all that much!
its a bunch of seeds and a paste you put in the oven to make a whole bunch you can store for a while! very nutritious!
@popmol thankyou so much for the tips .
I'm trying to go no sugar, (and no white simple carbs), because of two reasons ;.
1 - it's just plain bad for you
2 - given some time, I'll 'reset' my taste buds, and my system .

And I think it's working . I've already noticed that by cutting them out, I'm not getting cravings nearly as much as I did. I barely snack anymore. And now it happens when I AM actually properly hungry
(Snacking has something to do with simple carbs being turned into glucose so easily and creating a 'sugar hit' to your system - and hence a sugar drop = creates craving for hit)

And I swear it does . Now I'm getting no 'hits' there's no 'lows' . So no cravings start.
Which has also helped with reducing my coffee intake. If I eat proteins for breakfast, or have a steak the night before - I can go all day and not need to eat ....or drink coffee ! I have way better sustained energy levels that I don't crave anything .
Although since I've reduced my coffee consumption I now have to make sure I drink more water - I forget , as I don't have cravings for anything anymore.

I know people think too much bacon and eggs is too fatty, too much cholesterol .
But new scientific and medical research has found this thing about 'too much cholesterol ' is over exaggerated bullshit . We NEED cholesterol for so many bodily functions: hormones, immune system... repair .

In fact, they are now discovering that the cholesterol that's found in arteries isn't there just because someone ate too much fat, it's there because the arerty walls got weak from not eating enoughof the [b]right[/b] fats .
Fats build cell membranes....of EVERYTHING : arety and vein walls, gut , brain , enzymes, white and red blood cells, neural and nervous system .....ad infinitum - every cell in your body needs the right fats to a built a strong protective structure.

But the fad of the past recent decades of 'poly unsaturated fats' is partly literally killing people. These fats build a weaker structure , trans fats are even worse .
(You can create a trans fat by heating a weak fat too high ...ie the polyunsaturated ones )

These weaker structures are what cause the body to send stronger fat deposits to weak points in veins and arteries to try and fix them - and that's when blood flow problems start to happen 🤷
I'm not saying it means a ' free for all ' on eating fat - but it means 'pay attention to the fats you choose to eat' . Up those omega 3's, eat those saturated fats that are going to build strong cells .
People forget, we store all excess energy AS FAT. So as long as you aren't eating so much fat that you start storing it - that's good .

Sorry to go on and on ....but this had been a game changer for me . I'm on no anti-inflammatories any more . I stopped my SSR meds, my sleep is better (magnesium helped with that). less pain, clearer mind, less anxiety , no cravings .... Better nutrition has been an absolute savoir.
I got a headache the other day (too much screen time). And I took just one paracetamol tablet instead my usual 3 .....and it fixed it .

I can literally [b]feel[/b] the difference of eating a 'good' meal, to a 'bad' one. Diner used to make me bloated, tired/sleepy....uncomfortable ....reflux .
If I eat properly, the only thing I feel after a meal is ' deeply satisfied'.

Id been eating so badly for so long , id forgotten this is how food is supposed to make you feel 🤷

Sorry again - I'm just very passionate about this new journey I'm on . And to be 53 and on no medication at all .....is a pretty rare thing that's days, so I'm also very happy about it .

And yes - any advice you can share - id love to hear 🤗

@OogieBoogie ooh one good tip though, or more a fun fact, when eating pasta reheating makes it healthier. the easily digestible starches become hard to break chains that are hard to break down making you take less of it up and be healthier that way!

well cravings for water is something you should create cause its important but yeah the energy you get from sugar you'd need to constantly consume like an addiction to prevent the highs and lows.
fiber like some good veggies and meat will give you way more energy for the long run.

well its not entirely bullshit, theres 2 types of cholesterol the bad and the good. the good does the exact opposite of the bad one.
the issue is people hear cholesterol bad without context or leave out context so now everyone is like cholesterol bad.
everything has a nuance!
like testosterone is needed for men for sure but they also generate a bad testosterone that makes us bald.
i would say an egg and bacon (if its fresh bacon its less bad but filled with preservatives its not great) a day is a bit much. for various reason, if you exercise enough or have a tough job its not bad but if your life is more sedentary its not that great. you can do it whenever you do a workout though. but our body also need variety.

well its both fats, weaker body and sugars. the right oils are good like salmon, nuts, oils from seeds.
but oils made for high temperatures are awful! also you find the bad oils in meat cheese milk and of course chocolate and treats and fast food.
although those in milk are less bad than cheese and meat is also only bad in severe amounts. like kilos of steak. if you eat a 100 to 200 grams a day its no issue. and milk and cheese of course have other good effects too like microbes fro your gut!

yes indeed making an oil that can't handle high temperatures into one that can like olive oil or butter will make them awful.

haha yeah people underestimate how much a good night sleep and some good nutrition can help. also of course getting rid of addictions like coffee or sugar.
because half the exhaustions in todays age come from coffee and sugar highs and lows.
did you know the stuff in coffee has a half live of 6 hours. so it halfs every 6 hours in your body but the effect of the high stays way shorter. so the stuff making your body worse stays in for way longer yet the good effect almost not.

haha i found that funny, i know what you mean but i never had that issue i had to eat 4 plates of pasta to feel tired. i never got other people but it seems i have a pretty good stomach, plus with my intolerance bloating is normal xD
but yeah if i eat a light meal some chicken with spices, a nice fresh salad and some rice you'll not feel upset.

you should feel good you're doing great :)

one of the things i love most in cooking is finding meals that fit with each other.
you can't believe what the right meal does with the right dessert. not just no heavy dessert after a heavy dinner. but things like if you drink lassi, the yoghurt drink after a curry is so life changing! the lassi with its freshness and good probiotics and such will improve your gut and counteract the negative effects of the curry like straining your stomach!

i'm trying to find those kind of things that work well not only on one plate like a fresh salad with a crisp fry but things that one after another help. like a sorbet, yes it has a lot of sugar but it does help if you ate a heavy main course due to its lightness compared to something like icecream.
