Sweet potato pie 😋😊

@mbai2223 I am on a gluten-free diet and have learned to make things like mug cakes, muffins, waffles etc improvising and not using measuring cups etc. I just eyeball it and they turn out good. I have made gluten free Belgian waffles with leftover mashed potatoes, an egg, baking powder and a little salt. They need to cook a bit longer to make a good crust than regular waffles but can be eaten for sweet waffles or savory waffles if I want to add green herbs. Would probably be good with a bit of grated cheese in them too. . I like to change up the flavors and add nuts or different extracts etc sometimes too. I do the same thing with various types of salads. If it tastes really good it’s a keeper. Hard for me to write a recipe down like that for other people though.

@cherokeepatti update the pie was delicious I made four pies lol two has vanilla pudding and the other has creme of coconut it is both made with coconut milk
